Gigachad I'll have to get home to my PC to get the names of most of the WADs I like, but if you haven't already I greatly recommend you to play Kaiser's Doom 64 port, at least for his OG episodes.
If your issue is navigation, it really cuts down on a big chunk of mods unfortunately. It's a common issue that user maps have rather convoluted/unfriendly maps, either because the author hasn't gotten enough experience yet and make them as they go along without an actual plan or blueprint, or they have too much experience and has forgotten how lost players can feel when the map is too elaborate.
You mentioned Hedon and that is a very good example of the latter. I absolutely loved that game, but I'll admit that the combination of underground caves with narrow pathways and the overdesigned environment made for a really labyrinthine experience. The thing is that in order to make a "natural/realistic" looking map in the Doom engine you have to do lots of tiny staircases simmulating slopes and differing heights, which in turn makes the automap pretty much useless. Generally, the more detailed and realistic the map is the more lines are drawn on the automap and it ends up just being a cluttered mess that confuses you even more.
A good TC that's also free is Ashes 2063, which is a post apocalyptic Mad Max/Full Throttle/Fallout inspired game. I'd say the maps are on the harder side of things and there's at least 2 instances I've found that you can soft lock yourself by leaving your motorcycle behind when you're not supposed to, but it's not too bad.
There's also Selaco, which is a game a lot of purists thumb their noses at because of how much it modified the engine but it was still fun. You can play the demo for free on Steam so there's nothing to lose by trying it out.
There's also Boltgun, which is not in the Doom engine but it's still pretty neat if you like 40K.
You've mentioned Hexen, but if you don't like hard to navigate maps than I'd tell you to steer clear of it. You have to keep moving back and forth through levels activating switches that do "something" in another level and after a while everything starts to blurr together. It's a fun game but it does have that caveat which would probably be a deal breaker for you. Heretic would probably be more your alley, because it's basically a fantasy Doom. It's set in the same world as Hexen and has items and stuff but the game play is basically Doom, plus most of the weapons are Doom-equivalent (magical shotgun, magical chaingun, magical rocket launcher, magical chainsaw, etc).
Freedoom is pretty neat too, I definitely recommend it.
