Touhou Reiiden ~ The Highly Responsive to Prayers. The gameplay is akin to Breakout or Arkanoid, which I find very fun. The second game, Touhou Fuumaroku ~ the Story of Eastern Wonderland, marked the beginning of Touhou as a bullet hell/danmaku series. I've played a couple subsequent Touhou games, but I don't think that genre is for me. I'm not saying I know the general consensus, but from what I've seen, people either don't rate it highly or don't really care about it. Personally, HRtP is one of my favorite Touhou games.
