It's been about 3 years since I set mine up and its been mostly set it and forget it. (aside from updates). So I dont have an immediate memory of how I did it, but I took a look at the docs to try and refresh my memory.
I followed this pretty closely
I basically used this example almost verbatim originally. Although I did make some changes to the modules and such when I was trying to get images working (I actually think I just didnt sort out the ports...)
Check how the actual process is running via prosodyctl 'prosodyctl status' (maybe sudo depending on if you're root), that should have some useful info (hopefully)
